As always, our Reserve Series is a place for particularly unique coffees that have limited availability. Release #5 comes from Fazenda Guariroba, a Cup of Excellence winning farm producing coffee in the fertile soil of Santo Antônio do Amparo and specializing in a myriad of varieties that are not commonly seen in Brazil.
Fazenda Guariroba is owned by Homero Aguiar Paiva who acquired part of the centuries-old Cachoeira Farm and, with the help of his brother Renato Paiva (an agronomist), selected the best coffee varieties to maintain the plantation, renaming the farm as an homage to his grandparents and the land where they grew coffee. Today, Guariroba is managed by Gabriel Lamounier Vieira and Elisa Paiva Lamounier.
In this 8oz bag we are showcasing a Honey processed Pink Bourbon. After the coffee was depulped, it was placed in an open bioreactor with the addition of oxygen and select microorganisms to ferment for 46 hours. Post fermentation it was dried for 30-40 days on raised African beds.
The resulting cup gives an intense aroma of toasted fennel and coriander seeds with a soft, balanced palate full of almond cake and vanilla.
Pink Bourbon is rare in Brazil. Generally the beans are long and rounded - like an Ethiopian landrace - but due to the full sun exposure and high fruit productivity, the cherries were uniquely small and circular. The coffee is dense, and normal roasting conditions resulted in a fairly light expression of this coffee. Expect it to open up after some resting time as a result.
