This bright, citrus-led cup comes from our partners across the pond at Square Mile.

Local smallholders in Chelbesa, a kebele (village) in Ethiopia's Gedeo Zone, grow a mix of landrace varieties at 1,950 to 2,200 meters. They bring their cherry to the Chelbesa washing station for processing.

This lot went through an extended dry fermentation. After pulping, the coffee sits in its sticky fruit layer without being submerged in water, for longer than a typical washed lot, before it's finally washed. That longer ferment tends to build more fruit intensity, while the washing keeps the flavors clean.

Look for apricot and clementine, with plenty of juiciness. Square Mile roasts it for filter, so a pour-over or batch brewer is the way to go. It's at its best two to six weeks after roasting.
