Peñas Blancas is a washed, profile-fermented Ombligon from Jhoan Vergara at Las Flores in Huila, Colombia. The cup is fruit-driven and expressive, led by raspberry and tropical notes with a candy-like sweetness that gives it immediate clarity. Acidity is bright but controlled, supported by a dense, textured body that keeps the profile grounded.

That intensity of Peñas Blancas points to its process as well as its origin point. Ombligon is known for producing highly aromatic, fruit-forward coffees, and here it’s paired with a controlled fermentation approach that builds sweetness and structure without tipping into excess.
