Much like our All Day and All Night, La Victoria is a community lot comprising of selected lots from producers in Northern Huila, specifically Santa Maria and Palermo, and sourced by our green partners at The Coffee Quest.

La Victoria includes farms that sit between 1,700 and 2,300 meters above sea level, near the foothills of the Huila Volcano (National Park Nevados de Huila). The region is special not only for its high elevations but also for preserving traditional varieties such as Typica, alongside Castillo, Pink Bourbon, Caturra, Chiroso, San Bernardo, and Colombia - this iteration includes Castillo, Caturra, Colombia, and a little Pink Bourbon.

The combination of terroir and varieties allows La Victoria coffees to offer remarkable sweetness, red fruits, and a bright citrus acidity. To ensure this quality, producers carefully handpick ripe cherries, ferment them for 24 hours, followed by an additional 36-72 hours after de-pulping, before washing and drying—often on patios. Some producers contributing to this community lot have also used yeast inoculation during the fermentation stage to target and boost specific fruit character in the cup.

We are tasting bright cherry and cocoa here. The sweetness is 'classic Huila' with deep toffee and red fruit paired with a juicy acidity like grape and fresh cherry.
