Bekele Honey

This honey-processed lot from Murago in Sidama brings a clean, articulate cup in which Bekele sweetness sets the tone before fruit and florals emerge. Rather than a stewy excess of tasting notes, it’s the kind of profile that rides on clarity, offering definition and lighter acidic expression.

Produced by Bekele Kachara at high elevation, the coffee benefits from slow cherry maturation and careful drying. Retaining a portion of the mucilage during processing reinforces sweetness while preserving separation between flavors, allowing the cup to stay focused as it cools.

In the cup, honeyed sugar and concord grape lead, followed by apricot and bergamot-like citrus. Floral notes remain subtle, adding dimension without overt perfume. The body is syrupy but controlled, finishing clean and gently lingering rather than coating.
