Our friends at Drop Coffee have a wonderful approach to roasting that seems to highlight the sweetness and body in a coffee without sacrificing the unique qualities it has to offer. This may seem like an easy thing to achieve when roasting as it's something many roasters claim to have accomplished, but Drop ticks all boxes for us and then some when it comes to roast quality.
Hunkute is a familiar name for many coffee professionals. It's a relatively famous pair of washing stations in Ethiopia's southern region of Sidama. This particular lot is 100% organic and comes from the Site 2 washing station. Local smallholder producers deliver their freshly picked cherry to the Hunkute sites where it is sorted, graded, and processed.
It's been over a decade since Drop first started sourcing this coffee and our enthusiasm for it has not diminished. Their roast of the Hunkute lot accentuates the lifted floral aromatics, the tea-like structure, and a lively run of mandarin and apricot, all finishing with a sweet, refreshing clarity that keeps the cup compelling from first sip to last.
