Back again for another harvest because it's so sweet and juicy.
Kianjogu Factory (the name for wet mills in Kenya) receives cherry from 400+ producers who farm on the land surrounding the factory in Kirimukuyu, Nyeri County. Kianjogu is one of 7 factories managed by the Rutuma Amalgamated Farmers' Cooperative Society.
Smallholders handpick ripe cherry and deliver it to the factory that day where the coffee is meticulously sorted, pulped on the factory’s disc pulper and dry fermented for 16-24 hours.
After fermentation, the parchment is washed in clean water and soaked for 24 hours before drying on raised drying beds.
The drying parchment is sorted to remove any remaining defects and the parchment is turned constantly to promote even drying. Drying typically takes 10 to 18 days.
The resulting cup is juicy, clean, super sweet and packed full of flavor. This coffee gives us ripe red berry notes, subtle green tea and fresh apple. An absolute joy to drink black.
