A family-farmed, organic lot from Tolima with bright acidity and lingering praline.
This lot was originally released as a special Christmas coffee at Coffee Collective. The team there quickly fell in love with Reinel Perez's coffee and they have now focused deeper into their relationship with him and his family.
Reinel Perez took over the farm, Finca Circasia from his in-laws. It is truly a family farm as he shares the responsibilities of growing and processing coffee together with his wife. Even his daughter-in-law takes part as she is responsible for post-harvest processing the coffee with Reinel Perez’s son.
The farm is located in Tolima, a region in Colombia that is known for lingering notes of praline and bright, citric acidity. Coffee Collective roasted this hot and fast which according to their roasting department has helped accentuate some of the coffees more nuanced fruity character, and acidity.
The coffee is harvested, pulped and dry fermented for 32 hours before being dried on beds covered for protection. It's dried for 20 days, which is a typical period for Colombian coffees and then exported by Caravela who we work with on a lot of our Colombian partnerships.
This is a great expression of what Tolima has to offer with its amazing balance and subtly fruit qualities. Worth a look in for sure.
