No one should be punished for drinking decaf because it can be shockingly delicious and this is the Decaf you'll find on the bar at all of our Black Fox locations.
Ethyl Acetate (EA) is a byproduct of sugarcane fermentation that has a unique ability to bind to things like caffeine. For this reason it's commonly used in the decaffeination process in Latin-American countries and you'll see these listed as "EA Process" or "Sugarcane Process".
We think EA's are one of the cleaner tasting approaches to decaf but they usually show the same tropical fruit and graham cracker undertone regardless of the coffee that is used at the start.
La Serrania is a wonderful coffee though. It's chocolatey and creamy with a toffee like finish. So using Ethyl Acetate to decaffeinate it has just added a little fruitiness which we're certainly not complaining about.
