Danche is the name of the washing station where this coffee was processed. There are approximately 400 smallholder farmers in the local area that live at very high altitudes of roughly 2,000 - 2,300 masl and deliver freshly picked cherry from their 1-2 hectare plots of land to the washing station. The high altitudes play a significant role in shaping the distinct flavors found in the coffees here.
Snap Coffee owns and operates the Danche washing station, located in the Chelbesa village. Here the coffee is hand sorted, submerged in water and fermented in tanks for an average of 72 hours, density graded using water filled channels, soaked in clean water and dried on raised beds for approximately 8 - 20 days. The consistent use of water stabilizes the temperature though each stage and ensures all of the coffee is fermented evenly.
The resulting cup shows a clean, vibrant expression of ripe fruits. The aroma is that of earl grey tea, the oily skin of an orange and apricot. Enjoy this coffee over ice if you can. Just grind a little finer and swap out a portion of your hot brewing water as ice in your cup.
