But DNA fingerprinting and genetic studies conducted by coffee researchers revealed that Chiroso is completely unrelated to the Bourbon-Caturra lineage. The variety takes its name from the distinctive shape of the cherry, which forms a small protrusion resembling a belly button, or ombligo in Spanish. Daterra’s farm is split into more than 200 plots, and each one gets picked when its own cherries are at their peak. The ripest pickings then go through pulped natural processing, where cherry skins come off yet much of the fruit’s sugar stays on the bean through drying. Sugars from the residual fruit casing give this cup a round, enriched sweetness with a deeper body to carry a shot perfectly.

In the cup look for brown sugar alongside the peanut butter and chocolate, lasting through the finish.

Producer → Daterra
Location → Cerrado, Brazil
Varieties → Various
Altitude → n.a.
Process → Pulped natural

Cherry cola isn’t a note you see often on an Ethiopian coffee, and it’s what makes this natural from Monogram in Calgary stand out.

It’s processed at Lalesa, a drying station in Gedeb at the southern tip of the Yirgacheffe region, owned by the women-founded and women-led exporter Ephtah Specialty Coffee.
