This lot is out of Tolima - a region that's a little further north compared to Huila, Cauca and Nariño - so we begin to see coffees with less of that juicy, peach-driven profile and instead more caramelized sugars with softer, apple-like acidity.
If you take a look at the varieties in this lot you'll notice that they're all more traditional trees. The producers involved in Los Vascos are incredibly careful when selecting fruit being sure to pick only ripe cherries, discard of defects and focus on specialized tree care to maintain a healthy harvest across the entire community.
The resulting cup is soft and sweet. You'll pick up a hint of nuttiness under the smooth texture and rounded acidity with notes of dried fruit, red apple and almond.
